We love this beautiful holiday themed shrub for it’s amazing benefits of building the blood, detoxing the blood and boosting digestive function. It’s yummy, pretty and good for you!
- 3 large cooked beets
- ½ orange, peeled
- ½ lemon, washed
- 2 tablespoons sugar (more to taste)
- 2 cups apple cider vinegar
- 1 Tablespoon dried mint
- 1 teaspoon black peppercorns
- 1 tsp salt
- 1 tsp bitters (optional)
Place beets, orange, lemon, vinegar and bitter in blender and puree thoroughly. Press the puree though a mesh strainer with a rubber spatula and into a metal bowl. Add remaining ingredients and place into a covered, non-reactive container and steep for 1 day. If you prefer a more peppery flavor let steep 1 more day. Strain through a mesh strainer and bottle. The flavor will continue to develop after a week. Use within 2 months.
B.C.S. Mocktail
- 2 tablespoon Beet and Citrus Shrub
- ½ can of Sparkling or Grapefruit Sparking water
Serve in a wine glass and garnish with an orange. Easily converted to a boozy treat with the addition of a shot of vodka.
